This special variety of Whole Red Lentil is the whole masoor lentil with the greenish-brown shell removed. This whole variety has a delicate, nutty flavor. These lentils will cook fastest when soaked in water for several hours. These lentils can be cooked and mashed and added to minced-meat curry dishes, and seasoned with strong flavorings such as garlic, ginger, tamarind and curry leaves. These lentils are also great when made into soups with onion and souring flavors such as lemon and tamarind.
